So I will admit… I have been a terrible cook for most of my life.
My poor husband I feel bad for him. The first time I ever cooked for him I made chicken cordon bleu and he was so excited. He was thinking look at this, she can cook, chicken cordon bleu from scratch… I’m impressed. He just assumed I made it from scratch and I of course didn’t want to tell him that it was store bought and frozen from m&m’s.
We sit down to eat and he immediately cuts into his chicken. I’ve made this before and never had an issue, but as soon as he cut into it, there it was raw chicken. Yep I basically tried to poison him on maybe our 5th date.
I’ve never served him raw chicken again but in my attempt to be a good cook I have made plenty of easy, hard and delicious looking recipes, mostly found on the internet. I never steer away from the recipe for fear of wrecking the dish, Jon laughs at me for this because I still do it. For the longest time I just assumed I was terrible at cooking. He would make these amazing dishes of the top of his head, no recipe and just adding whatever we had at home to create it.
It wasn’t until I found Skinnytaste that I realized that maybe I was just picking bad recipes. I have tried so many different recipes from Skinnytaste and every single one of them has been a hit. I am so serious when I say EVERY SINGLE ONE OF THEM WAS A HIT. They are so delicious, healthy and easy. So in my drive to be fit, healthy and happy I thought today would be perfect to share with you my FAVOURITE Skinnytaste recipes.
Banging Good Shrimp
This is one of my absolute favourite items from Skinnytaste and the whole family agrees. I usually pair it with Asian Edamame Fried Rice. Jon and I love having extra sauce on ours and we put it over the rice and the shrimp in a bowl. Seriously the best thing ever.
Broccoli and Cheese Omelette
This is another staple in my home. This takes a little time to make in the beginning but I’ve got it down to a quick breakfast now that I have made it so many times. The bonus of this recipe is that it makes a big batch so you can have this for breakfast for a whole week. In the Skinnytaste Cookbook there is another version that I have yet to try although I have heard from my mom that it is delicious.
Oven “Fried” Pickles!!!!
I cannot begin to tell you the pickle obsession that has plagued this house. This is an item that I am buying constantly and in bulk. We love deep fried pickles but of course don’t love how unhealthy they are so when I saw the Oven “Fried” version OF COURSE we had to make it. And can you guess?? It was AMAZING!! So good and completely satisfies the craving for fried pickles in a healthy way.
Spicy Buffalo Cauliflower Bites
Picture wanting to eat some chicken wings… now picture how you feel afterwards.
Was it worth it?
My husband and I love these buffalo cauliflower bites and always make them when we have appetizer night. They definitely satisfy the chicken wing craving and you probably eat more of them because they are good and you don’t feel bad afterwards.
Crock Pot Chicken Taco Chili
We actually only made this last week for the first time and it was can you guess?? AMAZING! Seriously I cannot tell you how much this blog is the best food I’ve ever made. I had this for dinner, lunch and then dinner again, plus I froze the remaining left overs for another day when it’s just me. My kids loved this and sometimes they can be a little picky. Definitely an A plus when the kids will eat it too.
Baked Chicken Parmesan
Here is another recipe we make regularly in our house. It is really easy to create, we always have the ingredients in our house and it’s really good.
Skinny Buffalo Chicken Potato Skins
Yum! Who would had thought you can feel good about eating potato skins? And they aren’t the regular nacho loaded potato skins they are totally different and so good. If your not feeling like the spice then try the Broccoli and Cheddar Skinny Potato Skins which as equally as yum!
There are so many more that I am sure I am missing that I have tried from the blog. Now if you have or maybe even haven’t here are the recipes from the book that I adore. PS these aren’t available on the blog so you have to buy the book to get them. But believe me it is so worth it.
- Good-for-You Granola on page 26 is another breakfast staple! We make this every morning with greek yogurt. My kids love it.
- Make-Ahead Western Omelet “Muffin” on page 29. I haven’t made this yet but I’ve been told it’s better than the one I have shown above.
- Guiltless Chocolate Chip Pancakes on page 47. A great weekend treat for the family and so good.
- Breadless French Onion Soup with Parmesan-Asiago Crisps on page 55
- Coconut Chicken on page 126 I’ve made this twice in a week it was that good.
- Greek Chickpea Salad on page 146 makes a great prepare ahead of time salad and eat for lunches.
- Buttermilk Oven “Fried” Chicken on page 151
- Skillet Lemon Sole With Tomatoes and Capers on page 221 IS FABULOUS! We make this every few weeks it is that good.
- My House Salad, Made With Love on page 267 is heavenly! My favourite salad to make.
